Tomato Basil Penne Pasta

This meatless, light and easy recipe brings a rich-but-not-so-rich flavor with just garlic, fresh basil, tomatoes, and melting cheese.

Ingredients

12 oz penne pasta

3 tbsp olive oil

red pepper flakes

1/2 cup diced onions

2 cloves garlic minced

1 can whole tomatoes (3 whole tomatoes)

3 leaves fresh basil chopped

salt and pepper

3/4 cup pasta water

parmesan or mozzarella cheese


Instructions

  1. Bring a medium pot of lightly salted water to boil. Add the penne pasta and cook until 2 minutes before what's stated on the package.

  2. Meanwhile, heat the olive oil in a medium or large pan over medium heat. Add the onions and cook for about 3 minutes. Toss in a pinch of red pepper flakes and the garlic, and cook for 1 minute. Add the tomatoes and a pinch of salt and pepper. Pour in 3/4 cup of pasta water, and add chopped basil.

  3. Add the cooked pasta to pan and bring to a boil for about 3 minutes. Stir in your desired amount of parmesan or mozzarella cheese. Enjoy!
