This is one of the easiest pumpkin desserts you can ever make. It’s also a great alternative if you want the flavor of pumpkin pie but a lighter and fluffier version. This mousse is a perfect way to finish off a thanksgiving dinner, unless you're too stuffed. But there's always room for dessert right?
Servings: 4
Ingredients
8 oz cream cheese
1/2 cup brown sugar
2 teaspoons pumpkin pie spice
15 oz pumpkin puree
1 pint (473 mL) heavy whipping cream
1/4 sugar
2 teaspoons vanilla extract
Directions
In a medium size bowl, whip together the cream cheese, brown sugar, and pumpkin pie spice until light and fluffy. Add in the pumpkin puree and thoroughly mix.
In a separate bowl, whip together the heavy whipping cream, sugar, and vanilla extract until it has thickened. Add about ¾ of the whipped cream to the pumpkin mixture and thoroughly mix. Save the remaining ¼ of the whipped cream for the toppings.
Spoon the mousse into individual cups. With the remaining whipped cream, top the mousse. Sprinkle on toppings as desired. Done!
Tips:
For an even smoother mousse, soften the cream cheese beforehand.
You can also use an electric mixer to whip the mixture before adding the pumpkin puree. It will help you get a light and fluffy consistency.
If you’re looking to make the mousse dairy free, you can substitute the heavy whipping cream with coconut milk for the whipped topping. In replace of the cream cheese, you can use a dairy-free cream cheese such as Daiya, which is coconut-based.
