My new favorite breakfast of hash brown and egg casserole

Updated: Jan 1, 2021

This is my first casserole that I've made and eaten, and in fact the best breakfast recipe that I've ever made. Before taking my first bite, I expected bold flavors clashing at each other, but it was actually very simple. Don't get me wrong though, the hash brown, sausage, and cheese were full of flavor, but they complemented each other; It had the perfect taste and none of them overpowered another. This is a mouth-watering, warm and crispy casserole that is perfect for any breakfast or brunch meal. I love this dish and I know you'll love it too.

Servings: 4 Prep: 10 mins Cook time: 1 hr 10 mins

Ingredients

2 pound package frozen hash brown potatoes

11 ounces (0.68 lbs) pork sausage, minced

1/2 medium onion, diced

3 eggs

1/3 cup milk

1/4 teaspoon onion powder

1/4 teaspoon garlic powder

salt & ground black pepper for taste

1/2 shredded sharp cheddar cheese

Instructions

  1. Preheat oven to 350 degrees F. Grease a 1 quart baking dish. Place the hash brown potatoes in the bottom of the baking dish.

  2. Heat a skillet over medium heat and cook and stir the sausage and onions until sausage is evenly browned. Transfer the sausage and onions onto a plate with paper towel to drain excess liquid. Whisk together the eggs, milk, onion powder, garlic powder, salt and pepper, then pour over potatoes. Layer with half of the cheddar cheese (1/4 lb), sausage and onions, and on top of that the remaining cheddar cheese (1/4 lb). Cover baking dish with aluminum foil.

  3. Bake in the oven for 1 hour. Afterwards, remove foil and bake for another 10 minutes. Enjoy!
