Very Berry Blueberry Muffins

Sweet and buttery blueberry muffins with a crusty sugar topping. This is the perfect breakfast, go-to snack, or even dessert.

 

Servings: 12 Prep: 15 mins Bake: 30 mins


Ingredients

1/4 cup unsalted butter

1 cup white sugar

1/2 tsp salt

2 eggs

2 cups all-purpose flour

2 tsp baking powder

1/2 cup buttermilk

1 pint blueberries (rinsed, drained, and patted dry)


Instructions

  1. Preheat oven to 375 degrees F. Line the muffin pan with paper liners.

  2. In a large bowl, mix together the melted butter, sugar, and salt. Beat in the eggs, then mix together the flour and baking powder. Add the flour and buttermilk and mix. Crush half of the berries and stir into batter. Mix the rest of the whole berries into the batter. Pour batter into each muffin cup, half way.

  3. Bake in the oven for 30 minutes, or until golden brown. Enjoy!
